Desk Evil Hot Sauces are powered by HotSauceology, the study of hot sauce. Our team of Hotsauceologists works to understand and quantify the relative heat of not only our sauces, but also the peppers we grow and use.

Unlike the Scoville scale, which is a subjective, taste based scale,
HotSauceology’s goal is to utilize science to develop a database to conclusively rank peppers and sauces for their “hotness”. The database will rank these based off the individual QCL or Quantified Capsaicin Level. The QCL will, in some ways, parallel the Scoville scale in that the higher the QCL rank, the hotter the pepper or sauce. However, the QCL will be significantly different in that it will not be a subjective scale based on of someone’s taste, but rather based on quantified capsaicin levels.
